Red wine wild boar stew with root vegetables and dumplings - Introducing the stars of the new menu of Liget Royal Restaurant

- This game dish of ours is made special – like everything we serve at the Liget Royal Restaurant – by giving it the right way to prepare it, by taking the necessary time for the flavors to come together. To do this, we brown the whole wild boar leg, then simmer it briefly in juice with various root vegetables, a little red wine, a little tomato puree and wild spices – juniper, bay leaf, thyme, sage – and cook it until soft. The tender wild boar meat is removed from its juice and cut into rustic, larger pieces. Serve it garnished with boiled, crunchy, flavorful vegetables. The strained cooking juice is boiled further, and when thickened, it forms the basis for the sauce.
- The dumplings are served separately, so everyone can use them to stuff the very soft, very distinctively flavored game dish according to their taste and mood, which we also turbocharge with a little pickled vegetables - pearl onions, mustard seeds, red onions - plus the indispensable refreshment of finely chopped greens - parsley, English celery.
